A NEW RIF ON THE TOM COLLINS

The Botanist, A rif on the Tom Collins is a popular cocktail at The Lighthouse in Oxford.

Here we ponder on the recipe that we know contains Fresh lime, Elderflower cordial, Peach bitters and Gin but we will guess on measurements based on the Tom Collins

The Tom Collins is a cocktail made from gin, lemon juice, sugar, and carbonated water.  It was first mentioned by Jerry Thomas in 1876, “the father of American cocktails and mixology.  Initially using  “Old Tom,” gin,  a sweetened gin.  

Served in a tall, ice-filled glass with lemon juice, sugar, and soda water, the Tom Collins is basically an alcoholic lemonade.

A Rif on A Tom Collins

Ingredients

50 ml Dry Gin or Old Tom gin (such as Hayman’s)

25 ml fresh Lime juice

25 ml Elderflower Cordial

Splash of Peach Bitters

300 ml Ginger ale

Lemon zest to garnish

Method

Add Fresh lime, Elderflower Cordial, Peach bitters and Gin to a cocktail shaker and shake.
 
Using a tall glass, Pour over ice and top up with spicy ginger ale.
 
A Tom Collins is garnished with Lemon. 
 
 

Tom Collins

Ingredients

50ml Gin

25ml lemon juice

25ml sugar syrup

125ml chilled soda water

Ice

Lemon Garnish

Method

Add the Gin, Lemon Juice, Sugar syrup to a large tall glass of ice. Top up with Soda water and serve garnished with slice of lemon
 

Elderflower Collins

Ingredients

50ml Gin

25ml lemon juice

25ml Elderflower Cordial

125ml chilled soda water

Ice

Lemon Garnish

Method

Mix the drink as above for a Tom Collins, but substitute the cordial in place of the sugar syrup.
Garnish with a lemon slice.
 
 

John Collins

Ingredients

50ml Bourbon Whiskey

25ml lemon juice

25ml sugar syrup

125ml chilled soda water

Ice

Lemon Garnish

Method

Add the Bourbon, Lemon Juice, Sugar syrup to a large tall glass of ice. Top up with Soda water and serve garnished with slice of lemon
 
 

Sugar Syrup

Making your own sugar syrup is very easy. Equal parts of sugar and water. Heat until sugar has melted but not turned colour. Leave to cool and keep in fridge for up to a week.

Stir or Shake ?

Traditionally a Collins cocktail was stirred not shaken – but now it’s pretty well accepted to do your own thing and have fun
