The Tiki legend that is the Classic Mai Tai
The Mai Tai (Maita’i roa ae) is amongst the most famous Tiki drinks in the world. A mixture of Rum, Triple Sec (or Orange Curaçao), lime juice and Almond syrup.
It even enjoyed a starring role in the 1961 film ‘Blue Hawaii’ with Elvis Presley.
Mai Tai Classic
Ingredients
40 ml White Rum
20 ml Triple Sec or Orange Curaçao
15 ml Dark Rum
20 ml lime juice
15 ml Almond Sugar Syrup
Slice of Lime and Mint to Garnish
Method
Mix white rum, Triple Sec (Orange Curaçao), Lime juice and Almond Syrup in a shaker with a large handful of crushed ice.
Shake Gently – you don’t want to melt the ice too much.
Pour directly into a Rocks Glass (Tumbler type)
Garnish with a slice of lime and a few mint leaves
Make your own Almond Syrup
You can easily make your own Flavoured Syrups – they’re very easy
Basic Syrup
Ingredients
Method
Combine Sugar and Water in a saucepan and bring to the boil. Simmer until all sugar is dissolved.
Cool and keep in a sterilised bottle or jar in a fridge for up to 2 weeks.
Almond Syrup
Ingredients
Method
Combine Sugar and Water in a saucepan and bring to the boil. Simmer until all sugar is dissolved.
Cool, add almond essence and keep in a sterilised bottle or jar in a fridge for up to 2 weeks.
Homemade Grenadine
Tropical - Mai Tai
Ingredients
50 ml Pineapple Juice
50 ml Orange Juice
50 ml Spiced Rum
50 ml Coconut Rum
25 ml Triple Sec (or Orange Curacao)
15 ml Grenadine
Crushed Ice
Method
Mix all ingredients except the Grenadine in a shaker with a large handful of crushed ice.
Shake Gently – you don’t want to melt the ice too much.
Pour directly into a Rocks Glass (Tumbler type)
